Buffalo Chicken Tenders Recipe
If you can’t resist buffalo chicken tenders but are wary of piling on those extra calories, this recipe is perfect for you. Chunks of hot, spicy chicken are baked instead of being fried. So the next time you have guests over, try out this low-fat version of the all-time classic.
Ingredients
- 3 tablespoons Louisiana-style hot sauce
- ½ teaspoon paprika
- ¼ teaspoon ground cayenne pepper
- 1 lb. chicken tenders
- For the dip:
- ½ cup blue cheese dressing
- ¼ cup sour cream
- 2 tablespoons crumbled blue cheese
- For the garnish:
- 1 red bell pepper, sliced ½-inch-thick
Directions
Preheat oven to 375 deg. F. In a bowl, combine the hot sauce, paprika and pepper. Using a brush, coat the chicken with the hot sauce mixture. Now place the chicken tenders in a greased baking dish. Cover the baking dish and refrigerate for at least half an hour.
Bake the chicken tenders uncovered for about 15 minutes or until they are cooked through.
To make the dip, combine the blue cheese dressing, sour cream and blue cheese and mix well. Garnish the buffalo chicken tenders with the strips of bell pepper and serve along with the dip.
Tips
You can create a low fat version of this recipe by using reduced fat sour cream and low fat blue cheese dressing to make the dip.
