Buffalo Chicken Wings Recipe
Who can resist deep fried chicken wings coated in a spicy, hot sauce? Try out this recipe that replicates the taste of the original Buffalo wings prepared at the Anchor Bar. For best results, serve with blue cheese dressing and celery sticks on the side.
Ingredients
- 3 lbs. chicken wings
- 6 cups vegetable oil
- ¼ cup unsalted butter
- 4 tablespoons hot sauce
- 1 ½ tablespoons cider vinegar
Directions
Cut off the wing tips from each wing. Next, halve each chicken wing at the joint.
In a deep heavy kettle, heat the oil until a deep-fat thermometer shows a temperature of 380° F. After patting dry about 6-7 wings, place them in the oil gently and fry. Stir every now and then until the wings are golden, crisp and cooked through. Transfer the wings onto paper towels to drain. Fry the rest of the wings in the same manner.
Place the butter in a large skillet and allow it to melt over a moderate heat. Stir in the hot sauce, vinegar, and salt to taste. Add the fried wings and toss until they are evenly covered with the sauce.
Tips
Tip in a little Tabasco into the hot sauce to add more heat to your buffalo chicken wings.
